Ingredients:
- 1 pound of Kumara (orange or yellow)
- 2 cups of rolled oats
- 4 eggs
- 1 egg white
- 2 teaspoons of Vanilla extract
- 1 table spoon of honey
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 cup plain Yoghurt
Method:
Blend rolled oats in blender to powder form and place into a large mixing bowl
Add in cinnamon and baking soda to bowl
Blend 3 eggs and 1 egg yolk in blender add in vanilla extract and yoghurt
Peel and chop Kumara into small chunks add a little water and cook until soft in microware
Add kumara to egg mixture then add honey blend until smooth
Add the blended kumara and egg mixture to the dry ingredients and mix together
Beat egg white until fluffy and fold in to mixture
Add olive oil to a fry pan and cook mixture in batches on a medium heat.
